Ingredients & Instructions
  • 2 1/2 cups broccoli, chopped finely
  • 1/2 cup ham, cut to small pieces
  • 2 Tbl canola oil
  • 3 eggs
  • 1 can (12 oz) evaporated milk
  • 1 1/2 cups low fat cheddar cheese, shredded
  • black pepper to taste
  • 1/8 tsp. nutmeg (optional)
  • 1/4 tsp oregano (optional)
  • prepared crust for 9-inch pie

  1. Preheat oven to 375°F.
  2. Heat a large frying pan and add oil.  Cook broccoli, stirring frequently, for 5-7 minutes, until it is bright green but still crunchy (it will cook more in oven).  Add ham pieces and stir to combine; remove from heat.
  3. In a large bowl, beat eggs with evaporated milk and spices.
  4. Put pie crust into pie tin. Put 1/2 the cheese in the bottom of the crust, followed by the broccoli ham mixture.  Pour eggs over top and cover with remaining cheese.  Bake for 35-45 minutes or until the top of the quiche is lightly browned and a toothpick inserted 1 inch from the center comes out clean. Let rest 15 minutes before serving.
