Heat a large frying pan and add oil. Cook broccoli, stirring frequently, for 5-7 minutes, until it is bright green but still crunchy (it will cook more in oven). Add ham pieces and stir to combine; remove from heat.
In a large bowl, beat eggs with evaporated milk and spices.
Put pie crust into pie tin. Put 1/2 the cheese in the bottom of the crust, followed by the broccoli ham mixture. Pour eggs over top and cover with remaining cheese. Bake for 35-45 minutes or until the top of the quiche is lightly browned and a toothpick inserted 1 inch from the center comes out clean. Let rest 15 minutes before serving.
