Ingredients & Instructions
• 1 lb ground turkey or beef
• 1 tablespoon vegetable oil
• 1 medium onion, chopped
• 1 cup frozen corn
• 2 cans (15 oz) crushed or diced tomatoes
• 1 can (15 oz) black beans
• 1 can (15 oz) kidney beans
• salt and pepper, to taste
1. In a pan, brown ground beef or turkey over medium heat; drain and set aside.
2. Heat vegetable oil in a pot over medium heat, add onions and saute for 5 minutes.
3. Stir in ground beef or turkey, corn and tomatoes.
4. Drain and rinse beans; stir into pot. Season with salt and pepper.
5. Simmer over low heat for 15-20 minutes, stirring occasionally.
Makes 4-6 servings
