Rice, Onion & Mushroom Pilaf
Ingredients
• 1 tbsp margarine or butter
• 1/2 cup of finely chopped onion
• 1 cup of rice
• 2 cups of hot water
• 1 can (10 oz/241 mL) sliced mushrooms, drained
• 2 tsp of dried parsley
• 2 chicken or beef bouillon cubes*
• salt and pepper
*If your brand of bouillon cube makes 2 cups of broth per cube, use only 1 cube.
Directions
1.Turn on stove to medium heat. Melt margarine in a medium saucepan. Add onion and cook until soft, about 3 to 5 minutes.
2.Sitr in rice, water, mushrooms, parsley and bouillon cubes. Add salt and pepper to taste. Heat until boiling. Turn heat to low, cover, and simmer until rice is tender. This will take about 20 to 25 minutes and all the water will be absorbed.
